Just made my first low-FODMAP meal at home and I have to say, it’s pretty darn good. It took me twice as long to shop at the grocery store to buy a third of the amount of food. In addition to having to read all the ingredients on the package, I kept having to look ingredients up on my phone to see if they were low-FODMAP. It was also really difficult to decide what I wanted to make and never ended up deciding on snacks.
What did I make? Rice pasta, shrimp, zucchini, broccoli florets, basil (that I grow), dried parsley, parmesan cheese, olive oil, salt and fresh ground pepper. This is probably the first time I’ve ever cooked without garlic and I was really nervous for how the food was going to taste with such simple ingredients. I was pleasantly surprised!
Still not sure what I’m going to eat for snacks. That’s something I’ll really need the dietitians help with. So I guess I’m kind of tip-toeing into a low-FODMAP diet until my appointment at the end of the month. Between the changes I need to make for my mental health and physical health, I’m having a really hard time doing it all at once.
